Microencapsulation is a new technology. It is used to obtain capsules. Microencapsulation is an important technology of chemistry, cosmetics and food industry. It is used different purpose in food industry but microencapsulation of essential oils are at the forefront. Essential oils have short shelf life, they can be effected shortly from environmental conditions and degradation. Their stabilities are improved by microencapsulation technique. Wall material and ratio are an important issue for a good microencapsulation. Therefore, proper wall material should be chose. Carbohydras and proteins are used widely for microencapsulation. There are many techniques available such as spray drying, spray cooling, air suspension coating, extrusion, centrifugal extrusion, freeze drying, coacervation, rotational suspension separation, interfacial polymerization for microencapsulation. But spray drying is the most preferred technics because it is cheap and suitable for use.
